Documentation: Update rmt defconfig description
Updated the `rmt` defconfig description for the Espressif's SoCs. Use the `irtest` testing app (instead of the deprecated `rmtchar`) to test the RMT peripheral. Signed-off-by: Tiago Medicci Serrano <tiago.medicci@espressif.com>
