docs: 清理 README 中的失效链接和 Gitee 项目

- 修复拼写错误: builde→builder, NewPi→NewPipe
- 删除所有 Gitee 项目 (17个)
- 删除失效的 GitHub 项目 (7个)
- 移除微信图标链接
