docs: remove unmaintained entries and replace youtube-dl with yt-dlp

Remove eve, cornice, python-jose, python-readability, yapf, py2app, and
py2exe as unmaintained or superseded. Replace youtube-dl with yt-dlp,
its actively maintained fork.
