feat: add pyinstrument to Profiler

Developer Tools audit adjudicated by maintainer 2026-08-16: obvious choice per ClickPy (10.6M downloads/month), a statistical wall-clock profiler and common first reach for request-level profiling. Ordered after memray (15.6M/month), before challenger scalene (400K/month).
